Open any Registration, at the top right of the page, there will be a menu called Tags. Clicking this will show all available tags to apply to Registration.
Simply click the tag if you wish to apply it to the Registration. Tag being used on the registration will have a tick next to their name and will show up as a bubble underneath the menu.
